(ad) These veggie kabobs are the perfect way to enjoy a rainbow of vegetables at your next meal! I whipped up a delicious citrus marinade using my Proctor Silex electric juicer and it was an easy way to add tons of flavor to these gorgeous veggies. This is a great one for grilling season, and I know I’m going to be making these all summer long!   For the Marinade:
1/4 cup olive oil
Zest of 1 lemon
Zest of 1 orange
Juice of 1 lemon
Juice of 1 orange
2 cloves garlic, minced
1 tablespoon maple syrup
1 teaspoon dijon mustard
2 tablespoons chopped cilantro
Salt and pepper to taste
For the Veggie Kabobs:
1 small red onion, cut into 2” pieces
1 large zucchini, sliced into coins
1 yellow bell pepper, cut into 2” pieces
1 red bell pepper, cut into 2” pieces
1 orange bell pepper, cut into 2” pieces
4oz baby bella mushrooms
Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning) .
Instructions:
Slice the lemon and orange in half. Use the Proctor Silex electric juicer to juice each half.
Pour the juice into a small bowl. Whisk together the remaining marinade ingredients until well combined.
Place the chopped vegetables in a large shallow dish.
Brush the marinade over the vegetables, making sure they are evenly coated. You can reserve a small amount of marinade for basting while grilling.
Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
Preheat your grill or griddle to 400 degrees. (These can also be roasted in the oven at 400 degrees.)
Thread the marinated vegetables onto skewers, alternating the different types of vegetables.
Place the vegetable skewers on the preheated griddle and cook for about 5-8 minutes, turning occasionally, until the vegetables are tender and slightly charred.
While grilling, you can baste the kabobs with any remaining marinade for extra flavor.
Once the vegetables are cooked, remove the skewers from the grill and serve immediately. Season with salt and pepper to taste.
