💖PINK HUMMUS💖

Pink Beet Hummus — perfect for Valentine’s Day! I took all the tips I could find online for a creamy hummus that is easy to make at home, and after a bit of testing, I was able to put together this recipe. You probably noticed I boiled canned chickpeas and threw in some ice cubes. Read the recipe below for more! 👀

✨Ingredients:
•1 can of chickpeas
•1/2 tbsp baking soda
•1 1/2 lemons, juiced
•1/2 cup tahini
•1 tsp flakey salt
•3-6 ice cubes
•2 tbsp extra virgin olive oil (used cold pressed if possible!)
•1 small cooked beet
•crispy chickpeas, extra EVOO, & paprika for garnishing

In a medium saucepan, add chickpeas, water, and baking soda and bring to a boil. Reduce heat and simmer for 20 minutes until the chickpeas look mushy. Rinse and drain. Add chickpeas to a food processor or blender, and add lemon juice, salt, ice cubes, and olive oil. The ice cubes will help the hummus become creamy. Blend on high speed for 2 minutes, scrape the sides, and repeat as necessary. The hummus needs to blend until it is very smooth. Add the cooked beet (optional, but it turns the hummus pink!) and blend until thoroughly combined. Serve in a shallow bowl using a spoon and garnish with olive oil, crispy chickpeas, and any other seasonings you like. Enjoy!
