Ingredients

Serving 6

8 oz sugar snap peas sliced thinly
1 cup radishes cut in matchsticks
1/2 cup red onion diced
1 cup cucumber sliced
1 cup corn can or fresh
1 cup crumbled feta cheese
1/4 cup fresh mint chopped

Dressing

1 handful of fresh mint
1 tbsp Dijon mustard
1 tbsp honey or agave syrup
1/4 cup olive oil
3 tbsp lemon juice 
Salt and black pepper to taste

Instructions

In a blender add all ingredients for the dressing. Blend until creamy.
In a large bowl add all the vegetables, feta cheese and fresh mint. 
Drizzle the dressing over the salad. Toss to combine. Enjoy!
