Notes from Chef Tim: "This is such a special dish... Spring Parsnips are one of our favorite vegetables.  So sweet after overwintering! Our friends at commonthreadfarm dug these a few weeks ago.  We're studying them on this dish with Butter Poached, Puréed, and Crispy Fried.
