Who doesn't like a good icebox cake recipe?
Especially with it being #labordayweekend 

I'm a sucker for butterscotch so I had to use the new flavor from simplydelishnatural in the best way I knew how.

Recipe:
Crust
1½ cups catalinacrunch cinnamon toast cereal
3 tablespoons sugar (I used a mix of white/brown swervesweetie )
6 tablespoons butter, melted

Cream Cheese Layer
16 ounces cream cheese, softened
¾ cup powdered sugar (used truvia )
1 teaspoon vanilla
1 cup whipping cream

Butterscotch Pudding Layer
1 pack simplydelishnatural butterscotch pudding mix (use code Ketoxjunkie)
¾ cup skinnymechocolates milk chocolate baking melts, roughly chopped and divided
2 tablespoons whipping cream

Whipped Topping Layer
1 9 ounce container of truwhip
Optional garnish: chopped chocolate or even add crushed cinnamon toast cereal
