NOTES: The Shiner Bock-based marinade not only tenderizes the ribs for melt-off-the-bone goodness. It also infuses the ribs with malty flavors, which gets a nice contrasting kick from the chipotle in the rub. And we can’t forget the additional smoky flavors from the mesquite wood we used.

INGREDIENTS
1 (3- to 5-pound) rack of beef back ribs 
2 bottles of Shiner Bock beer
1/3 cup olive oil
2 tbsp Worcestershire sauce
4 cloves of garlic, minced
2 tbsp dijon mustard
2 tsp salt
3 green onions, roughly chopped
2 bay leaves
2 tbsp brown sugar
2 tbsp chipotle powder
1 tbsp paprika
1 tbsp garlic powder
1 tbsp black pepper
2 tsp kosher salt

DIRECTIONS
1) Combine beer, olive oil, Worcestershire sauce, garlic, dijon mustard, salt, green onions, and bay leaves in a large mixing bowl.
2) If necessary, remove the thin membrane from the underside of the ribs. Use a butter knife to slide underneath the membrane, and pull away with a paper towel.
3) Place ribs in a nonreactive pan large enough to fit them. Pour over marinade, turning to coat. Cover and refrigerate at least 6 hours, up to overnight. Turn ribs a few times so the meat is evenly marinated.
4) To make rub, combine brown sugar, chipotle powder, paprika, garlic powder, black pepper, and kosher salt in a bowl. Mix well.
5) Prepare a smoker or a grill for indirect cooking at 250° F. Remove ribs from marinade and pat dry with paper towels. Season generously with rub on all sides.
6) Arrange ribs on smoker or grill grates and cook for 3 hours, maintaining the temperature between 250-275° F. Ribs will be ready when a knife passes easily through the meat. 
7) Let rest for 20 minutes before slicing and serving.
