## Caption

What can you do with leftover rice? More than you may think. (Left) Veggie skillet - sauté cooked rice in butter. Add greens. Whisk eggs + poir over cheese. Cook until egg sets. (Right) Fried Rice -  sauté veggies in oil. Add rice. Whisk eggs + soy sauce together and fold into mixture. (Bottom) Stuffed Tomatoes - sauté veggies in oil. Stir in rice. Fill hollowed tomatoes with this mixture. Top with cheese and roast at 400 for 15 minutes.  #lundberg #mealprep #leftovers #riceisnice #veggies
