Sun-dried tomato coconut milk pasta 🍝 creamy and rich with a velvety texture and lots of flavorful spices 🤩 Dairy free & vegan as always! Coconut milk replaces heavy cream and adds a lovely subtle flavor to the sauce.

Here’s what you’ll need:

High quality extra virgin olive oil
Yellow onion
Garlic 
Full fat coconut milk – the secret to this sauce’s luscious, creamy texture. Coconut cream can be used for an even creamier texture.
Pasta sauce or crushed tomatoes
Dried oregano
Fresh basil
Salt and red pepper flakes
Oil packed sun dried tomatoes 
Rigatoni
