Lamingtons 🥥🍰 a classic Australian/NZ teatime dessert. I grew up eating these all the time and decided to make some at home since you cannot find them here in the US! The closest thing here would probably be a zinger, but the homemade version is 100 times better! 😍

LAMINGTONS

Sponge Cake
4 eggs, separated
1/2 cup granulated sugar
3/4 cup cake flour
pinch of salt
3 tbsp vegetable oil
1 tbsp vanilla extract

Toppings
1 box raspberry jello powder
2 cups water
1/2 cup chocolate chips
1/2 cup heavy cream
Unsweetened coconut
Whipped cream and raspberry jam (optional)

Preheat the oven to 320F. Beat the egg whites in a large mixing bowl with an electric mixer, until fluffy.
Gradually pour in the sugar while whisking, beat until stiff peaks have formed. They will stand straight up without curling over when the whisk is pulled out of the bowl.
Whisk together the egg yolks and salt in a separate bowl, then gradually pour into the beaten meringue.
Once the yolks have been incorporated, sift the cake flour into the bowl. Fold the flour into the mixture very carefully, to avoid deflating the air in the batter.
In a separate bowl, whisk together the oil, vanilla, milk, and about 1/4 cup of the cake batter, mixing until smooth. Gently pour the oil mixture into the cake batter bowl, folding until completely combined.
Pour the cake batter into a lined baking tray and bake for 30-35 minutes, or until a skewer inserted comes out clean. Allow cake to cool, then remove from the pan and trim off the edges and slice into squares.
Combine the jello powder with the water according to package instructions and allow to cool to room temperature.
Place the chocolate chips and heavy cream into a bowl and microwave on high for 30 second intervals, stirring in between until completely melted. Allow ganache to cool to room temperature.
Dip the edges of half the cake squares into the raspberry coating, then cover in coconut. Repeat with the remaining cake squares in the chocolate coating.
Serve with fresh whipped cream and jam if you like.
