#ad CHOCOLATE DATE & PISTACHIO CAKE RECIPE

This cake is packed with datesaregreat California dates and pistachios, making it so rich and decadent! 🤤
Not to mention- eating dates adds fiber, nutrients, antioxidants and other polyphenols to your diet! 🙌🏻 

RECIPE

15 California Dates, chopped
4 tbsp (60ml) brandy
1 1/4 cups (300ml) boiling water + 1 cup (240ml) boiling water
2 1/2 cups (312g) all purpose flour
1 1/2 cups (300g) granulated sugar
3/4 cup (83g) unsweetened cocoa, plus more for dusting
2 tsp (9g) slightly heaped baking soda
1 tsp baking powder
1 tsp salt
3 large eggs, room temperature
1 cup (240ml) sour cream, room temperature
1/2 cup (120ml) vegetable oil
1 tbsp (15ml) pure vanilla extract
1/2 cup (85g) high quality dark chocolate chips
1 cup (153g) salted shelled pistachios, chopped
vegetable oil spray

1. Preheat oven to 350F (176C). Grease with oil spray, dust with cocoa powder and line four 6-inch  or three 8-inch round cake pans with parchment paper.

2. Place the dates, brandy, and 1 1/4 cups boiling water into a heat proof bowl. Allow date mixture to soften and cool to room temperature.  Place the cooled date mixture into a blender and pulse until smooth. Set aside.

3. Sift the flour, sugar, cocoa powder, baking soda, baking powder, and salt into the bowl of your stand mixer fitted with the paddle attachment. Set the mixer on low speed, mixing until fully combined.

4. In a medium bowl, combine the date puree, eggs, sour cream, oil, and vanilla. Whisk until well incorporated, then set aside.

5. Place the chocolate chips into a microwave safe bowl and heat for 30 second intervals, stirring in between. With the mixer running on low, pour the date mixture into the flour mixture in slow stream. Slowly add the boiling water, melted chocolate, and chopped pistachios. Increase your mixer speed to medium and beat until creamy. 

6. Divide the batter among the prepared pans, and bake for 30 minutes. 

7. Frost with Chocolate Buttercream and top with chocolate covered California Dates, cranberries, and pistachios.
