Appreciative thanks to Minneapolis/St. Paul Business Journal reporter Brianna Kelly for her thoughtful June 3rd interview with our founder and pastry chef Alicia Hinze. Brianna and Alicia discussed the impact of COVID-19 on Alicia’s plans for The Buttered Tin and on the restaurant industry in general. 

Alicia explained how she balanced plans for her expansion to a second location with the challenges of maintaining her Lowertown restaurant through the pandemic. She also addressed employee compensation issues in the restaurant industry, and the steps she took to implement positive changes at The Buttered Tin as business returned to normal. Here’s an excerpt from the interview:

"What’s the biggest lesson you’ve learned as a restaurant owner over the past eight years?

There has been so much learning for me. I was a baker and a cake decorator before I opened The Buttered Tin. I think everything about having a staff, the ups and the downs and the goods and the bads, all of that has been probably the biggest learning curve for me. Going from opening the restaurant because I love to bake, decorate and make food, to a CEO—that’s a huge transition that you can only be prepared for from living through it. I always tried to remind myself and my team of the reasons why we got into it in the first place—for the love of creating something for people to enjoy, and that's always remained."
