Congratulations to Alicia’s fellow alum, Sabrina Tinsley, owner of Osteria La Spiga in Seattle. Her delightful signature cappelletti recipe appears with Alicia’s Perfect Vanilla Cake in the new Beard Foundation cookbook.

As Sabrina explains, “Cappelletti, which means ‘little hats,’ are an absolute staple of the Christmas season in the northern Italian region of Emilia-Romagna. They are typically filled with pork and capon, and served in a rich beef–capon broth. At Osteria La Spiga, I fill them with prosciutto and, after cooking them in chicken broth, toss them with a creamy Parmigiano ‘fonduta,’ finishing with a drizzle of best-quality balsamic vinegar.” Sign us up!
