I’m obsessed with these healthy carrot cake blondies 😍 They’re soft and tender with plenty of sweetness. Thanks to the almond butter, they’re SO satisfying.

Here’s the recipe:
Ingredients
1 cup creamy almond butter
1 egg (see blog for vegan option)
1/2 cup coconut sugar
1/2 cup finely shredded carrots (about 2 large carrots)
1/3 cup walnut pieces
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt (reduce slightly if your almond butter is salted)

Instructions
Preheat the oven to 350 degrees.
Line an 8×8 pan with parchment paper, or spray with non-stick spray.
In a large bowl, combine the almond butter, egg and coconut sugar until completely mixed.
Stir in the carrots, walnuts, baking soda, cinnamon, cloves, and salt until combined.
Spread the mixture evenly into the baking pan. A rubber spatula can help spread it into an even layer.
Bake for 25-28 minutes until a toothpick inserted in the center comes out clean.
Let cool completely before cutting into squares.

FYI- These are a little crumbly! I recommend storing them in the fridge so they hold together a little better.
