We're still enjoying eggplant season over here, and my fridge is overflowing, so I thought I'd share my air fryer eggplant pizzas! (Don't worry, you could make these in the oven, if you don't have an air fryer!) It's an easy way to make a low carb pizza that will satisfy your cheesy cravings and it only takes a few ingredients to make! While this certainly won't replace the real deal, 🍕 it's a fun way to use eggplants!
