These carrot cake bars haven been getting a lot of love this week 🥰 They’re soft and rich, like a blondie, but they’re made with good-for-you ingredients! It’s the perfect snack while you’re working from home and/or chasing around the kiddos. (I’ve told these have been getting a 👍 from the littles as well!)

INGREDIENTS
1 cup creamy almond butter
1 egg (or chia egg, if vegan)
1/2 cup coconut sugar
1/2 cup finely shredded carrots
1/3 cup walnut pieces
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt

INSTRUCTIONS
Preheat the oven to 350 degrees.
Line an 8×8 pan with parchment paper, or spray with non-stick spray.
In a large bowl, combine the almond butter, egg, and coconut sugar until completely mixed.
Stir in the carrots, walnuts, baking soda, cinnamon, cloves, and salt until combined.
Spread the mixture evenly into the baking pan. A rubber spatula can help spread it into an even layer.
Bake for 25-28 minutes until a toothpick inserted in the center comes out clean.
Let cool completely before cutting into squares.
