This Maple Pecan Granola is only 5 ingredients and it's completely oil-free!

I have to admit, I was skeptical that oil-free granola would turn out crunchy but it DID! I got the recipe from plantbasedgabriel's new cookbook, which comes out in December!
.
He gave me get a sneak peek of the book and let share this recipe with you all! He's a fellow food blogger here in Richmond and if you're not already following him, be sure to check him out! I love that his recipes are simple and delicious. 😋

INGREDIENTS
1 1/2 cups rolled oats
1/4 cup pecan pieces
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
(I added a pinch of sea salt to my batch!)

INSTRUCTIONS
Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
In a large bowl, combine the oats, pecan pieces, maple syrup, vanilla, and cinnamon. Stir until the oats and pecan pieces are completely coated.
Spread the mixture on the baking sheet in an even layer. Bake for 20 minutes, stirring once after 10 minutes.
Remove from the oven, and allow to cool on the countertop for 30 minutes before serving. The granola may still be a bit soft right after you remove it from the oven, but it will gradually firm up as it cools.
