Why are salted duck eggs red? 🤔

Alam mo ba ... did you know ... after brining, salted eggs are dyed red to distinguish them from raw eggs. These eggs are known as itlog na pula (also called itlog na maalat). 🥚‼️

itlog = egg
pula = red

The technique of curing whole eggs is thought to have arrived in the Philippines with Chinese migrants, who considered red to be a lucky color. ❤️

They are as vibrant on the inside as they are on the outside. After the curing process, duck eggs take on a beautiful, bright yellow color to their yolk. Their texture also changes, bringing out the rich and fatty decadence of the egg in a deliciously savory way. 😋
