When the price of beef is through the roof, it’s time to work on stepping up your game with the cheap stuff. I present to you a $4.50 costco chicken. Simple season salt, pepper, garlic. Hot smoked at 300° using hickory wood and the kamadojoe slo roller to keep the heat distribution on point. It results in a perfect skin that is crisp and not rubbery. Cooked about an hour and a half with meatermade making it easy. Didn’t peek one time and did a bunch of house chores until my phone went off. Easy weekday dinner.
