Heart-shaped alfajor cookies💓🍪

They’re the softest shortbread-like cookies stuffed with dulce de leche. They’re common in Latin America and are one of my fave treats. I have been making these for many years and, for some reason, just decided to film a video making them! You can use any cookie cutter for these, and they will hold their shape :) this is a very forgiving dough, perfect for beginners.

✨Ingredients:
•1 cup room temp. unsalted butter
•2 tsp vanilla
•1 cup cane sugar
•1 egg
•3 egg yolks
•3 cups corn starch 
•1 tsp baking powder
•2 cups flour
•dulce de leche 
•powdered sugar (for dusting)

Preheat oven to 350. In a large bowl, cream butter, vanilla, and sugar by beating at medium-low speed until airy and fluffy. Continue beating at low speed and add the egg and yolks one at a time until incorporated. In a separate bowl, combine all the dry ingredients (corn starch, baking powder, and flour) using a whisk. Use the paddle attachment of your stand mixer if you can, and continue to beat the creamed mixture at low speed, and slowly begin to add in the dry ingredients. Once a smooth dough forms, dust flour onto a clean surface and begin to roll the dough into a ball. Place in between two pieces of parchment and roll out until achieving a thickness of about 1-1.5 inches. Remove the top layer of parchment and use a cookie cutter to cut the cookies. Remove excess dough and roll out again to make more cookies. Place on a baking sheet lined with parchment (re-use the one you were using to roll the dough) and bake for 10 minutes. These cookies DO NOT get golden brown; they should remain almost the same color throughout. Otherwise, they’ll look and taste burnt. Remove from oven and place over a cooling rack for 30 minutes. With the help of a piping bag, add about a tablespoon of dulce de leche and sandwich together by placing another cookie on top.  Dust with powdered sugar, and enjoy!

This recipe yields 20 large alfajores or 40 small ones. You can always cut the ingredient quantities in half, but these cookies are so addictive you’ll regret not making more and sharing with others. Store in an air-tight container for up to 5 days #alfajores #easyrecipes #cookie
