It's all about the heat capacity of water. You know how water takes FOEVA to boil on the stove? That's because it has a high heat capacity, which means that it takes a lot of energy to raise its temperature.⁣
⁣
Essentially - it *absorbs* heat (aka ENERGY) really well. So before, the energy was all directed into the latex, which created a weak point in the balloon. But in the 2nd example the energy is transferred to the water, which absorbed it really well across all of its water molecules.⁣
