Vegan blueberry buckle 🫐 with a fluffy, soft and moist texture. Plus, it’s loaded with tons of fresh blueberries and has a crisp streusel on top that adds a sweet crunch to every bite

What is a buckle, you may ask? It’s an old-fashioned, single layer cake made with batter and fresh berries, often topped with a streusel or crumb topping. It’s somewhat reminiscent of a coffee cake but it has berries inside!

Here’s what you’ll need for this recipe:
Vegan yogurt
Vegan butter
Sugar
All purpose flour
Baking powder
Blueberries of course
Vanilla
And dairy free milk
