INGREDIENTS
Cake
• 2 ⅔ cup all-purpose flour (335g)
• 1 cup light brown sugar firmly packed (200g)
• 1 ½ teaspoons baking powder
• ½ teaspoon baking soda
• 1 teaspoon salt
• 1 Tablespoon ground ginger
• 1 Tablespoon ground cinnamon
• ½ teaspoon ground nutmeg
• ½ teaspoon ground allspice
• ½ teaspoon ground cloves
• 12 Tablespoons unsalted butter melted (170g)
• ½ cup vegetable or canola oil (118ml)
• ¾ cup unsulphured molasses (177ml)
• 3 large eggs room temperature preferred
• 1 Tablespoon vanilla extract
• 1 cup sour cream 8 oz/226g
• ⅓ cup very hot water

Frosting
• 8 oz cream cheese softened (use full-fat cream cheese) (226g)
• ½ cup unsalted butter softened (113g)
• ⅓ cup light brown sugar firmly packed (66g)
• 1 ½ teaspoons vanilla extract
• ⅛ teaspoon salt
• 4 cups powdered sugar (500g)
• 1 Tablespoon heavy cream or milk optional
