Happy Diwali! Shankarpali, also known as sweet diamond bites, are a tasty Indian snack that are perfect for celebrating this bright holiday. 🕯 #shiptchef

Ingredients:

• 1/3 cup water
• 1/4 cup sugar
• 4 tsp clarified butter (Ghee) or vegetable oil
• 1 pinch salt
• 1/4 tsp cardamom powder
• 1 cup all purpose flour
• 1/4 cup wheat flour
• 1 1/2 cups of vegetable oil for frying

Directions:
1. Warm water in microwave for one minute and add to mixing bowl with sugar and butter. Stir until sugar dissolves.
2. Combine flour, salt, and cardamom powder in mixing bowl. Knead the flour mixture to make a stiff dough. Continue kneading until dough is soft and does not stick to your hands or bowl. Add a sprinkle of water or oil to dough if needed.
3. Divide the dough into 4 portions. Cover for 30 minutes.
4. Grease rolling pin and roll out dough into 4 seven inch circles. Cut the circles into one inch vertically. Repeat horizontally, until they resemble diamond pieces. 
5. Separate the pieces and transfer onto plate.
6. In a deep frying pan, heat oil on medium heat.
7. Add first batch to the oil and stir continuously. Fry them until they are golden brown, then remove and let cool.
8. Repeat until all batches are complete.
9. When cool, savor the Shankarpali!
