Our staff gardens in Vermont are overflowing with produce this time of year, so Christine shared three of her summer snack staples that use up a significant amount of produce in one go. What are your go-to garden recipes???

Pan fried (blistered) shishitos: Sauté these finger-sized, mild peppers whole in a pan with olive oil and a little bit of salt sprinkled on top. Eat them as a stand alone snack or side or chop them up and add to a dish.

Pesto: This is a go-to for using up basil! Make it in large batches and freeze it to last until the next growing season. There are lots of different flavor combinations you can try.

Quick pickles: For the gardener who doesn't like raw cucumbers or have all the canning equipment, Christine highly recommends quick pickles which require a brining solution and only last a few weeks in the refrigerator.
