To celebrate the wondrous food avocados are, I have another guacamole recipe for you today! A month ago, I went to make my favorite pomegranate guacamole and pomegranates were no where to be found -- so I decided to dice up strawberries and give it a try. BEST IDEA EVER.

Buy yourself some ripe avocados, some super sweet organic strawberries, and either hot chiles or more mild ones. This Strawberry Guacamole is the perfect snack or appetizer. Eat it with jicama (so good!), tortilla chips, veggies, or pile it on top of your chicken or fish.

RECIPE
🥑 2 avocados, ripe
🥑 ½ jalapeno, finely chopped
🥑 ¼ cup cilantro, finely chopped
🥑 2 tablespoons onion, finely chopped
🥑 2 tablespoons fresh lime juice
🥑 2 tablespoons fresh mandarin juice
🥑 Sea salt, to taste
🥑 1 cup strawberries, chopped

DIRECTIONS
🥑 Add avocado, jalapeno, onion, cilantro, lime juice, mandarin juice, and salt to a bowl. Stir until the avocado gets creamy. I leave mine chunky - but continue stirring until it’s the texture you love.
🥑 Add the strawberries, and stir until mixed in. Adjust seasonings (more lime or salt, if needed).
*The jalapenos will get spicier the longer the guacamole sits, as the oils are released.
🥑 Serve with thinly sliced jicama, veggie sticks, or tortilla chips! It’s also great as a topper for chicken and fish.
