Crispy battered fish fillet cobb salad - Cheers to summertime and all the beautiful salads because who likes to heat the kitchen? I made a classic cobb salad today with crispy battered fish fillet from @gortonsseafood Totally delicious packed with summer vegetables and of course crispy fish fillets. Because you know at least twice a week you need to consume fish. Flaky and covered in a crispy batter they are unbeatable. Crunchy on the outside and flaky on the inside, Gorton’s Crispy Battered fillets are a must-have in your freezer. I mean look at this rainbow on a platter. Recipe Prep time: 15 minutes 
Cook time: 20-25 minutes 
Yield: 4 servings 

Ingredients 

6-fillet Gorton’s Crispy Battered Fish Fillets 
2 cups romaine salad chopped 3-4 hardboiled eggs 
1 cup precooked bacon chopped 2 cups cherry tomatoes sliced 
½ red onion sliced 
1 avocado cubed 
1 cup grilled or steamed corn 

Blue cheese dressing 

1 cup crumbled blue cheese 
1 cup kefir 
½ lemon juiced 
1 tbsp fresh dill 
Salt and pepper to taste 

Instructions

-Preheat oven at 425F
-On a baking pan transfer Gorton’s Crispy Battered Fish Fillets
-Bake the fillets as per package instructions. Feel free to use air fryer. 
-In the meantime, in a food processor combine all ingredients for the dressing. Blend until smooth and creamy! 
-Remove fillets from the oven and let it cool for a few minutes. Chop in small pieces. 
-Build your Cobb salad with a bed of romaine lettuce, and arrange the onions, bacon, tomatoes, chopped fish fillets, avocado, eggs, and corn. 
-Pour dressing over the salad and toss to combine. 
-Enjoy!
