And we celebrate with roasted lamb, Baked Scalloped Potatoes, deviled eggs, lots of greens and other delicious side dishes. Servings 8-10
Ingredients
2 packages of Baked Scalloped Potatoes @main_st_bistro
1 -5lb leg of lamb
1 tbsp salt
1 tsp black pepper
 
Marinade
½ cup olive oil
2 tbsp fresh rosemary chopped
3-4 garlic cloves minced
1 tbsp lemon zest
 
Directions
Remove meat from the refrigerator and let it come to room temperature for 1 hour.
Prepare marinade combining all the above ingredients.
Season meat with salt and black pepper.
Cover with marinade and let it rest for another 30 minutes.
Preheat oven at 400F degrees.
Place meat in a baking pan with a rack and roast for 30 minutes at 400F
Lower the temperature at 350F and continue cooking for another hour and a half.
Check the temperature. For a medium rare the temperature needs to be at 135-140F.
Let it rest for15 minutes before cutting.
In the meantime, place the trays of baked scalloped potatoes in a baking dish and heat in the oven as per package instructions.
Serve with roasted lamb and other side dishes.
