Roasted beets and kale salad! 🥗I’ve been running like crazy today! This salad came together in no time thanks to my previously roasted beets. All I did was roasting a can of chickpeas in air fryer, wash and chop kale and Voila! Super tasty fall salad that you can include in your menu. ⬇️

Roasted red beets
Roasted golden beets
1 can of chickpeas
Red onion
Crumbled feta cheese

Olive oil
Apple cider vinegar
Maple syrup
Dijon mustard
Salt and black pepper

You can roast chickpeas in the oven also at 400F for 15 minutes. Just mix them with olive oil and your favorite spices. They make a great snack too. Easy peasy right?
