Tuna Lemon Spinach Spaghetti is our dinner tonight. #ad How often do you eat pasta? We eat it at least 2 times a week in our family. If you ask my children, they want pasta every night. They are right because pasta is healthy, affordable, easy to prepare, and above all delicious. Pasta is made from grain, which is one of the basic foods needed  for our body. It’s a great source of energy, fiber, and vitamins. They are a staple dish of the Mediterranean diet. Lots of my Italian friends will support me on this as they have pasta every day and it is the perfect way to include and highlight many other health foods.

Ingredients:
1 lb package of spaghetti
½ cup olive oil
3-4 minced garlic
2 (5 oz) tuna in water can
 Zest from 1 lemon
Juice from 1 lemon
1 tbsp of capers
2 cups of baby spinach
Red chili flakes

Instructions:
Boil pasta per package instructions.
In a sauté pan, add olive oil and garlic.
Cook for a few minutes, and do not burn the garlic.
Drain tuna from water and add it to the pan.
Keep stirring.
Add capers and continue to cook on low heat.
Transfer boiled pasta into the pan.
Add 1 cup of pasta water and combine gently.
Add lemon juice, lemon zest, and spinach.
Give it a nice toss and serve immediately.
