September is around the corner, and I can’t wait for all the beautiful flavors and colors that Fall brings. #ad This quick salad is a delicious way to celebrate end of summer. I’m using @EarthboundFarm Organic Baby Red Butter as a canvas for my vegetables and fruits. We have a lettuce based salad at least three times a week in our family. I just love when my life gets easier on the kitchen. This triple washed organic lettuce is so fresh, crispy, tender, and I adore the purple tones. Ingredients
Earthbound Farm Organic Baby Red Butter @EarthboundFarm
Sweet potatoes
Fresh figs
Feta cheese
Walnuts
Salt and Black pepper
Olive oil
Za’atar mix spices (optional)
 
Dressing
Olive oil
Balsamic vinegar
Honey
Salt and Black pepper

Instructions
Preheat oven at 425 F degrees.
Dice sweet potatoes and transfer them on a baking sheet.
Season sweet potatoes with salt, black pepper, and olive oil.
Roast sweet potatoes for 15-20 minutes.
Meantime toast walnut on a sauté pan.
In a small bowl combine ingredients for the dressing. Mix or shake well using a jar!
In a medium bowl start building salad with first layer of Earthbound Farm Organic Baby Red Butter @EarthboundFarm, continue with roasted sweet potatoes, fresh figs, toasted walnuts, feta cheese, and sprinkle Za’atar mix.
Drizzle dressing over the salad.
