With our commitment to our community and to sustainability we are so proud that over the course of the last few years, we’ve been able to virtually eliminate food waste in our restaurants! 

One way we’ve been able to do this, is through our community fridge in Evanston’s historic 5th ward, that provides 24/7 food to anyone in need, no questions asked.

One of the initiatives we’re most proud of, is our rib program. On every rib tip we make, we remove a breast bone. Most Chicago bbq places leave it on, but we don’t, we prefer to slice our tips instead of chopping them, we believe it provides a better experience. As such, we’d normally be composting the rib bone, even though it’s delicious and tasty. We just don’t have a use for it. 

Instead, we take the time, to season and smoke them, and serve them to our community every day for the last two years.

This isn’t food for thought, this is food for action. 🔥
