WAKE & BAKE 🍃💨 Celebrate 4/20 with these cannabis-infused brownie bars layered with oreos on a salted chocolate chip pecan cookie base 🍪 

INGREDIENTS ⬇️

Cookie Base– 2 1⁄4 cups all-purpose flour– 1 tsp baking soda– 1 1⁄4 tsp sea salt – 3⁄4 cup vegan cannabutter, room temp– 1⁄4 cup extra virgin olive oil– 1⁄4 cup granulated sugar– 1 cup brown sugar, packed– 2 tsp vanilla extract– 6 tbsp aquafaba– 1 cup dark chocolate chunks– 1 1⁄2 cups chopped pecans– 12-16 OreosBrownie Base–  1 Box Brownie Mix (Follow the brownie package instructions, using olive oil, 3 tbsp aquafaba per each egg, and your choice of any strong coffee instead of water.)Garnish–  2–3 tbsp sprinkles

Cookie Layer1. Preheat the oven to 375°F (191°C).2. In a small bowl, combine the flour, baking soda and salt.3. In a large mixing bowl, beat the cannabutter, oil, granulated sugar, brown sugar and vanilla extract until creamy.4. Add 3 tbsp of the aquafaba, beat to combine, then add the remaining 3 tbsp and keep mixing.5. Slowly add the flour mixture and beat to combine.6. Roughly chop two-thirds of the chocolate chunks. Leave the rest whole. Stir the chocolate and pecans into the batter.7. Press the cookie dough into an even layer in the lined baking dish. Bake for 15 minutes until just beginning to set.8. Let cool slightly on a wire rack.Brownie Layer1. Reduce oven heat to 350°F (177°C).2. Layer 12-16 Oreos over the cookie layer, then make the brownie layer. Follow the brownie package instructions, using olive oil, 3 tbsp aquafaba per each egg, and your choice of any strong coffee instead of water.4. Pour the brownie batter over the Oreos and cookie layer. Spread into an even layer, then cover with sprinkles.5. Bake for 35-40 minutes, until a toothpick inserted into the center comes out mostly clean with a few crumbs.6. Let cool on a wire rack, then chill for 1-2 hours before serving. Feeling extra munchy?
