Colombian Brazo de Reina🇨🇴🍰👑 (cake roll) // Latin American Desserts Ep. 1

Welcome to my new series where I will be making desserts from every single country in Latin America 🫶🏼 #HispanicHeritageMonth is about to start so this is the perfect way to celebrate our cultures.

Im so excited to share this recipe from my country. It may look a bit intimidating, but I swear it’s really easy to make! See below for full instructions and feel free to ask any questions you may have.

✨Ingredients:
-8 medium eggs
-200 gr cane sugar
-200 gr all purpose flour
-1 tsp vanilla extract
-2 cans condensed milk (or arequipe / dulce de leche)
-100 gr sugar for dusting *optional*

Preheat oven to 400F. Add all the eggs to the bowl of a stand mixer and beat at medium-low speed for a minute. Gradually pour sugar into the bowl and increase the speed to medium-high. Beat for 3-4 minutes, until the batter becomes fluffy and turns into a pale yellow color. Using a mesh strainer, sift half of the flour and gently incorporate into the batter with a spatula. Repeat process with remaining flour.

Line a half-sized sheet pan (13”x22”) with parchment paper or use a silicon baking mat, gently spray a bit of baking spray on the sides. Pour batter on top and spread it evenly. Bake for 12-15 minutes, until golden. Cool for 5 minutes. Take a tea towel and generously dust it with flour, then flip the cake over it and remove parchment. Spread a generous layer of arequipe with an offset spatula. If it’s too thick, warm it up to achieve a runnier consistency.

With the help of the towel, roll the cake starting from one edge to the other, making sure to tuck it in tightly as you go. Wrap it in plastic wrap and refrigerate for 2 hours. Dust with sugar and enjoy!
