Pastelitos de Coco 🇨🇺🥥🌴// Latin American Desserts Ep. 3

I had to do Cuba next!! I swear growing up in Miami makes you half Cuban LOL. Every grocery store (even the American ones) carries Cuban baked goods. You can’t walk more than two blocks without being able to find a guava pastelito. To me, they are the most iconic Cuban dessert✨ 

Also, this dulce de coco (coconut filling) is to die for!!! Absolutely delicious pls make it. I promise you will LOVE it. 

Que viva Cuba <3 Patria y Vida.

✨Ingredients:
-1 cup (90gr) unsweetened coconut
-1/2 cup milk
-1/2 cup (90gr) cane sugar 
-1 tsp vanilla extract
-2 puff pastry sheets
-1 egg
-1 tbsp water

Start by making the coconut filling. Add shredded coconut, milk, sugar, and vanilla extract to a medium saucepan. Cook over medium heat for 15 minutes while continuously stirring. It should thicken and become a paste. If it’s still too wet, combine 1/2 tbsp of cornstarch with 2 tbsp of water and add to your filling.  Cool down until it reaches room temperature. 

Thaw your puff pastry following the instructions on the package and preheat oven to 350°F. Flour your work surface and unroll both sheets of puff pastry. Gently flatten using your hands or a rolling pin. Cut each pastry sheet into 8 even squares, or use a cookie cutter to make fun shapes. Add about 1 1/2 tablespoons of coconut filling to the center of each puff pastry square and spread evenly while leaving a 1/4-inch border. Place a second pastry square on top of the filling, close the edges using your fingers, and then crimp the edges using a fork. In a small bowl, mix the egg with the water. Using a brush, cover the pastries with a thin layer of egg wash.

Bake for 12-15 minutes until they puff up and look golden brown. Cool down and enjoy!
