## Caption

Braised some chuck and shank meat with a bunch of peppers from the garden.

Kind of like a Mississippi pot roast.

After searing in tallow, a quick roux with a couple tbsp of flour.

Onion, celery, peppers and garlic.

A little apple cider vinegar and crushed tomatoes.

Seasoned with a chili seasoning blend, salt and pepper.

3-4 hours at 325.
