## Caption

Fall is here, and so is the perfect excuse to indulge in all your favorite fall flavors! This is Barry’s favorite Sunday Chili recipe - and it’s Top Secret.
 
Ingredients:
3 cups of chopped onion
2 cloves of garlic, finely minced
6 Strips of bacon- partially cooked
2 tablespoons of oil or bacon drippings
4 pounds chopped beef or turkey
1 teaspoon oregano
2 teaspoons of cumin
2 -4 tablespoons chili powder, or more to taste
4 cups tomatoes fresh, canned, and crushed 
2 cups hot beef stock
1/3 cup Masa Harina
Beans:
1 bag of dry kidney beans
2 bay leaves
1-2 small ham hocks
6-10 cups of water

Preparation: (Meat)
In a large saucepan sauté onions bacon dripping until tender and translucent – Approx 10 minutes. Add garlic.
Add the meat, breaking up clumps with a heavy wooden spoon, add partially cooked bacon to mixture, chop to smaller bite size pieces. Sauté, stirring often, until lightly cooked, no red showing, about 10 minutes.
Sprinkle in the oregano, crushed cumin and chili powder. Mix
Add the tomatoes, salt and hot beef stock. Stir in Masa Harina to thicken mixture.
Bring to a boil, cover and lower the temperature to a simmer, stir frequently, about 1 hour.

Preparation: (Beans)
Put the beans in saucepan and add salt if desired, bay leaves, ham hock and 6 cups of water
Bring to a boil reduce heat and simmer until beans are tender (not mushy) about 1.5 – 2 hours.
Add more water if it cooks away.
Drain the beans and add some of the liquid to the chili for more flavor. Cut off what meat there is on the ham hock, chop and add to the chili. Discard bay leaves. Add half of the beans to chili, blend the second half of beans into a puree and add to chili mixture(optional). Mix well and simmer for 10-15 minutes. Adjust your spices accordingly.

Enjoy with some of your favorite additions: Chopped red/ Spanish onions, sour cream, Mexican blended shredded cheese and tortilla chips
