Thanksgiving Mini Pumpkin Pies 🥧 

Here is a last minute Thanksgiving dessert/appetizer idea! These are no-bake pumpkin cheesecake bites and taste just like a pumpkin pie!

INGREDIENTS
-8 oz cream cheese, softened
-1/4 cup powdered sugar
-2 tsp pumpkin pie spice
-1 tsp cinnamon 
-1/4 cup pumpkin purée 
-1 tsp vanilla
-Pinch of salt 
-mini tart shells
-cinnamon sugar and whipped topping

Place the cream cheese, powdered sugar and spices into a large mixing bowl. Beat until light and fluffy.

Add the pumpkin purée and vanilla, beating until well combined.

Transfer the filling to a piping bag and fill each of the tart shells. Add a sprinkle of cinnamon sugar and a dollop of whipped topping to finish them off. 
Chill in the fridge for 1 hour before serving.
