## Caption

Spending the day cooking up a double batch of these easy stovetop pumpkin puddings (topped with whipped mascarpone, toasted buckwheat & pecans) to bring with us to SoCal. 

These puddings are egg-free and I've included dairy-free and refined sugar-free options as well. They taste like the silkiest pumpkin pie filling only they're so much easier to make and don't require any oven space. Oh and they keep like a dream for days!
