Excited to share the recipe for these GF vegan pumpkin pie bars! The luxurious filling is made from a combination of @hodofoods award-winning organic extra-firm tofu to help it set, coconut milk to make it rich and creamy, and cornstarch to thicken the filling. Paired with my almond flour shortbread crust and golden pumpkin pie spice, it makes a dreamy fall treat.

Hodo is made in the SF Bay Area from organic non-GMO soybeans. It’s the only tofu that I ever use, and I always have a few blocks in my fridge at any given time. It's a versatile ingredient that's neutral enough to use in both savory and sweet preparations. 

Here the #HodoExtraFirmTofu blends seamlessly with sweet pumpkin puree, warm spices, and a hit of sweetness from maple syrup and coconut sugar. Take the words of my friend and taste tester Amelia and her chef BF Brandon, both of whom have the most sensitive of palates that enjoy all the gluten and dairy:
