If you’re anything like me (and you live in the northern hemisphere) you have at least three kinds of stone fruit on your counter rn. I can help you out to the tune of GF stone fruit galette! 

This beauty combines my fave gluten-free flaky pie crust dough with peaches, plums, nectarines, or whatever fruit you have on hand. I add a little cardamom and a drizzle of honey. They bring out the bright floral flavors of the fruit in a magical way. 

Galette may look fancy but it’s actually way easier than making a pie! I’ve shared some tips in the post for how to make extra flaky galette dough and how to keep the crust crisp.
