COZY SEASON IS HERE and we need salad. yes, salad. this winter salad is GORGEOUS and delicious. bright purple raddichio is combined with honeyed pecans, persimmon, squeaky, delicious halloumi and paired with the most delicious honey mustard dressing featuring my favorite @mailleus Dijon Original Mustard. My go-to addition for dressings, marinades (even mac n cheese). #mymaille Here is the full recipe:

Salad:
2 honey nut squashes, peeled, halved and sliced
1 tablespoon olive oil
Salt and pepper
1/3 cup pecans, chopped
2 teaspoons honey
Pinch of kosher salt
Few rounds of freshly ground pepper
2 persimmons, sliced and those sliced halved
8 ounces halloumi, cut into 1/2-inch pieces
2 heads raddichio, leaves separated and torn and washed

Honey Mustard Dressing:
1 shallot, minced
1/4 cup apple cider vinegar
1 garlic clove, minced
2 teaspoons honey
Kosher salt
Freshly ground pepper
1 teaspoon @mailleus Dijon Original Mustard
1/3 cup olive oil

Preheat oven to 400 degrees F. Add the sliced squash to a baking sheet. Drizzle with olive oil and toss with a few pinches of salt and pepper. Transfer to the oven to roast for about 20 to 30 minutes, until tender. Transfer to a bowl to cool.

In a medium non-stick pan, add the pecans, honey and a few pinches of salt and pepper. Toss together and toast until fragrant and warm, about 2 to 3 minutes. Transfer to a small bowl to cool.

To make the dressing, add the minced shallot to a jar. Pour in the apple cider vinegar, garlic clove, honey, salt and pepper, and Maille Dijon Original Mustard. Place the lid on the jar and give it a generous shake.
