One of the things I’d like to do in 2015, is take a food photography and/or styling class. I love to eat and I love to share great experiences with you. Yet I always struggle to because I rarely love the way my food photos turn out. Nonetheless, I just had to share with you my two favorite meals in Santiago because I don’t want you to miss out on knowing about them. The flavors themselves were incredible & the environment the meals were enjoyed in was just as enjoyable.

Shown here is a dish I actually assembled myself, during class at @kitchenclub with Chef @VonPlate. This is an event and private dining space in the neighborhood of Las Condes. If you’re a company, you can host your event there. If you’re Chilean and looking to brush up your cooking skills, or you’re a traveler who just wants an unusual dining experience while in Santiago — I recommend checking out their website [link in their profile] to reserve a spot at the next private class. It’s very fun but even more than that, the dishes are fantastically delicious. This starter on a kind of hard cracker featured the best Chilean stewed beef [Tapapecho] I’ve ever had with flavors that I’m still telling people about days later.

Also of note is Rodolfo Guzman’s BORAGó in the neighborhood of Vitacura, not far from Kitchen Club and nearby quite a few other fine dining establishments. Guzman has been influential in carving out a place for fine dining to thrive in Chile. When he first opened in Santiago, he told us, locals did not entirely understand his way of preparing and serving endemic ingredients. He sources what he cooks only in Chile and has found a way to make even the most basic or maybe scary ingredients truly delectable. The 17 courses we enjoyed were like theater and visiting with Guzman afterward was the perfect nightcap. He’s just been at Expo Milano representing Chilean cuisine to an international audience and I wish him and his staff nothing but the most extraordinary success in the culinary world.
