Hey all! In case you missed it, I’ve #partnered with @RiojaWine to share this amazing recipe for the holidays (or any occasion!): Dooboo Jorim with a Rioja red wine demi glace! I developed this recipe because I wanted to take advantage of the rich, versatile flavors of Rioja’s wine (made in the Rioja region of Spain). It’s a total crowd pleaser and an easy choice when I’m hosting a dinner party or showing up at a holiday event! With over 600 wineries in the Rioja region, you can find a wine fit for virtually any occasion. I always keep a few bottles of Rioja in my kitchen, so incorporating it into a dish was the most logical thing, and the best part is, any number of Rioja’s wines will make this dish (or any recipe, for that matter) taste even more INCREDIBLE.  Recipe below!
.
2 tbsps cooking oil
1 16 ounce block extra firm tofu, sliced
2 cups mushrooms, chopped
1 shallot, julienned
3 cloves garlic, minced
Pinch of salt
1 carrot, sliced
1 celery stalk, diced
1 red bell pepper, julienned
3 scallions, chopped
1 tbsp gochujang
1 tsp cracked black pepper
1 cup Rioja aged red wine (I used the Bujanda—YUM)
2 tbsps soy sauce
1 tbsp vegan butter
1 tbsp toasted sesame seeds
1 tsp sesame oil
.
Add 1 tbsp of oil to medium non-stick pan over medium high heat. Cook tofu until brown on both sides and set aside. Add more oil then add mushrooms. Cook for 3 minutes, add shallot and garlic, with a pinch of salt and pepper. Add carrot, celery, red bell pepper, and scallion whites. Then add gochujang. Deglaze with Rioja and soy sauce. Add back the tofu, and cook for about 10 minutes or until sauce is significantly reduced. Add the butter and stir. Garnish with sesame seeds, scallion greens, and sesame oil.
