June is Men’s Health Month and a perfect time to grill nutritious and delicious fresh fish. This month’s recipe features mackerel with loads of roasted vegetables, both staples of the healthful Mediterranean diet. Joining chef Jeff Held this month is NYU Langone urologist Dr. Seth Cohen, who details the benefits of the Mediterranean diet for men, include improved fertility and reproductive health and cancer prevention.

*Grilled Mackerel with Tomatoes, Roasted Garlic, and Escarole*
_Serves 4_

*Ingredients*
4 whole mackerel, 1½ half to 2 pounds each, filleted
2 heads escarole, trimmed and washed, quartered in wedges
½ teaspoon dried chili flakes
1 head garlic
2 lemons, halved
4 tablespoons olive oil
1 pint Campari tomatoes, halved 
salt and black pepper
6 to 8 sprigs fresh oregano
6 to 8 sprigs fresh thyme
¼ cup fresh parsley, sliced 

*Instructions*

Turn on the grill and thoroughly brush with oil. 

Slice off the top of the garlic head, removing about ¼ inch of the top cloves. Tear off a 2-foot section of aluminum foil and fold it in half twice to form a pouch. Place the garlic head in the pouch and then add about 1 tablespoon of olive oil. Season with salt and pepper. Seal the pouch leaving a 1-inch opening at the top to allow steam to escape. Place the pouch directly on the grill and roast until the garlic is soft, 30 to 40 minutes.

Pat the fish dry with a paper towel and score the skin of each fillet 3 times with a sharp knife. Lightly drizzle with olive oil and season with salt and pepper. 

To prepare the escarole, lightly drizzle with olive oil and season with salt, pepper, and chili flakes. Place it, along with lemons, on the grill. Lightly oil the tomatoes. Preheat grill pan. 

Arrange the escarole and lemons around the fish on the grill. Place the tomatoes on the grill pan. Don’t be afraid to char the vegetables, it enhances their flavor. 

Grill the fish filets skin side down for 3 to 4 minutes until skin frees itself from the grill. Flip and grill 2 to 3 minutes to finish.

To serve, garnish the fish and vegetables with the roasted garlic, herbs, and lemon.

*_Tip:* Omega 3 fatty acids are concentrated in the mackerel skin, so leave it on!_
