Shedding crabs in Louisiana dates back to the late 1800s. Mr. Daniel Edgar runs a soft-shell crab operation at his dock, St. Mary Seafood and Marina. 

It’s an incredible operation that he designed himself. Mr. Daniel wholesales the soft-shell crabs.

Shedding crabs is a round the clock operation. Once a crab has molted from its old shell, it will remain soft for only a few hours in the water. These crabs must quickly be removed from the water to prevent shell hardening. Soft-shell crab is a delicacy thanks to these hardworking folks!
