We adore these spicy Thai Chicken Meatballs. They take about 10 minutes to mix together and are perfect served any night of the week, but also a great protein to make in batches to keep on hand for quick lunches.

I use zucchini instead of breadcrumbs, for moist and juicy meatballs with gluten. The creamy coconut sauce is pure magic! @SunButter sunflower seed butter thickens the sauce and gives it a peanut-sauce flavor.
