Ingredients
16 oz Lifeway Farmer Cheese
1 tbsp fresh dill chopped
1 garlic clove grated
1 tsp lemon zest
3 tbsp lemon juice
1/4 olive oil
Salt and pepper to taste
 
For the vegetable topping
1 cup tomatoes diced
1 cup cucumber diced
1/2 cup red onion diced
1/2 cup kalamata olives chopped
1/2 cup banana peppers chopped
1 tbsp dry oregano
Pinch of salt
1 tbsp olive oil
 
Instructions
In a food processor combine the Lifeway Farmer Cheese, fresh dill, grated garlic, lemon zest, lemon juice, and olive oil. Blend until smooth.
In a separate bowl, combine the diced tomatoes, cucumbers, red onion, kalamata olives, and banana peppers. Add the dry oregano, a pinch of salt, and 1 tablespoon of olive oil. Toss gently to combine.
Spread the cheese mixture evenly onto a serving platter or shallow dish. Spoon the vegetable mixture evenly over the cheese base.
Serve immediately with pita bread or pita chips.
