❄️🥶 Winter is still here, and it's the perfect time to load up on the best cold-weather foods! Not only do these delicious eats help keep you warm, but they also boost your immune system to fight off those pesky winter bugs. 🌡️🍵
Here's a quick and cozy recipe using some of these powerhouse ingredients! If you have your own winter favorite, drop it in the comments so everyone can give it a try!

Spiced Coconut Chicken with Roasted Carrots & Cauliflower
Ingredients:
2 chicken breasts (or thighs)
1 cup coconut milk
1 tsp ground cinnamon
½ tsp ground cardamom
½ tsp ground coriander
½ tsp cayenne pepper (adjust for spice preference)
½ tsp black pepper
½ tsp salt (if allowed)
1 tbsp fresh basil, chopped
1 tbsp chives, chopped
1 tbsp olive oil (or coconut oil)
For the Roasted Vegetables:
2 carrots, sliced
1 cup cauliflower florets
½ tsp caraway seeds
½ tsp black pepper
½ tsp salt (if using)
1 tbsp olive oil
For the Garnish:
4 cherries, pitted and sliced
¼ cup toasted chestnuts, chopped
Instructions:
Marinate the Chicken:
In a bowl, mix coconut milk, cinnamon, cardamom, coriander, cayenne pepper, black pepper, and salt.
Add the chicken, coating well, and let it marinate for at least 30 minutes (or overnight for deeper flavor).
Roast the Vegetables:
Preheat oven to 400°F (200°C).
Toss sliced carrots and cauliflower florets with olive oil, caraway seeds, black pepper, and salt.
Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
Cook the Chicken:
Heat a large skillet over medium heat and add olive oil.
Remove chicken from the marinade and cook for 5-7 minutes per side, until golden brown and fully cooked.
Pour the remaining marinade into the pan and simmer for 3-5 minutes until slightly thickened.
Assemble & Serve:
Plate the roasted carrots and cauliflower.
Place the coconut-spiced chicken on top.
Garnish with sliced cherries, toasted chestnuts, fresh basil, and chives.
