While many people say “gluten allergy” in restaurants to get the safe food they need, it’s important to use the correct terms in medical spaces. Sometimes, even doctors misuse the term gluten allergy! People with celiac disease can’t develop a tolerance to gluten like some people with allergies can, because they don’t have an allergy—they have an autoimmune disease.
