Lavender Blueberry Clafoutis

Servings: 6
Ingredients
3 cups blueberries 
3 eggs
1/2 cup sugar
½ cup flour
1 cup milk
4 tbsp butter
1/2 tsp lavender
1 tbsp powdered sugar for serving
Whipped cream for serving
 
Instructions
1.Add milk to a small saucepan and bring it to a simmer over medium heat (do not boil). Remove from heat, sprinkle in the lavender, and let it steep to infuse the milk with flavor. Set aside.
2.Preheat the oven to 350°F.
3.Place a cast iron skillet with the butter in the oven to melt.
4.In a bowl, whisk the eggs and sugar until the sugar dissolves and the mixture becomes frothy.
5.Gradually add the flour, whisking continuously to prevent lumps.
6.Strain the infused milk into the batter and whisk until fully incorporated. The batter will be thin and liquid.
7.Carefully remove the hot skillet from the oven.
8.Spread the blueberries evenly across the bottom of the skillet.
9.Pour the batter over the berries and bake for 45 minutes, or until golden and set.
10.Remove from the oven and let cool slightly.
11.Sprinkle powdered sugar over the top.
12.Serve warm and enjoy!
